1. Saffron: More Than Just a Pretty Color (aka, My Deep Dive)

So okay lets talk Saffron, this small- yet powerful tiny lil’ strands of, basically flower stuff, that people use for.. what ? taste? i thought so to… Its very important because in my head i’m like, they cost more than a kidney if your kidney is from those black market people – not my market by the way! But really, Saffron comes from the Crocus sativus flower, specifically its stigmas which, who knew a little plant parts could be like that? its weird for me, and very very beautiful. They literally pick those little flower hairs, or what i will call tiny red fire threads, by HAND. imagine that, every little string, one by one! I get tired doing the laundry! So yeah. that cost adds up very very fast because of labor ( and those marketing prices.. arrg i hate those too). I thought this whole things could be a pyramid sheme once i looked online because wow the prices are crazzy… i thought they grow on the sun. They make it all yellow with their very yellow pigment ( that’s how I remembered what Saffron look’s like!) like a paint bucket poured on everything it touched when used in dishes and it even smelll good- i though if heaven was smell i imagine would be kind of Saffronish lol.
Anyways that whole experience makes saffron the Queen B of Spices i guess ,or i will call them the Kim Kardashian spice hehehe. It’s like this mystical spice that has always caught my eye and that taste of bitter sweet kind of flowery/honey? it just brings magic to everything and as a cooking ‘expert’ i guess i can call myself haha, you always want something like this, right? it also bring me a warm kind of vibe of grandmom old kitchens recipes but fancy too..weird combination but it works lol!

2. Why Vegetarian and Why Saffron? Like, a Winning Combo, Okay?

Okay here’s my case – for me vegetarian cooking always felt like, an exciting challenge! It was always fun to get all veggies from market – my Sunday tradition lol- I think it’s cool when the most regular simple foods, becomes epic on plate- Like I love meat, I’m not gonna lie but when you can make food that doesn’t feel you need meat at all- that is epic! That said, sometimes we want to avoid meats (you know for planet or health) –and sometimes meat is the budget-thing killer for my monthly meal. Its crazy how everything went up so much!! i don’t understand – that inflation stuff really screwed my budget plan. This why vegetarian is more frequent now – also good to eat all that beautiful veggy goodness so the body can ‘refresh’ its nutrients haha! (not expert- just saying lol). When you get some Saffron on that veggies you take that epic-vegetable-ness even more, its like this is not for survival food any longer is ‘omg the taste ‘ kind of level. Also it gives my ‘cheap’ vegetarian dishes (haha sorry i should avoid this bad connotation of simple dish, haha) something ‘boujee’ you know? makes things a little ‘elevated’, even if everything cost me pennies.. i look expensive i think – food also needs good ‘face’, we don’t live in a cave we should admire our meal before to eat, yeahh that what i believe hehe. It a mix of all the worlds together here: it give the dishes a flavor, the beautiful look ( i’m serious guys that orange/yellow dye just does its thing!). it can turn everything so nice and beautiful. i sound too dramatic – lol sorry its just that i really love when food can surprise us ! and with saffron.. almost nothing failed (almost!). Plus saffron have some fancy antioxidant stuff- thats also awesome because its always good for the old health we have to keep that thing kicking around – right ? so, flavor-check, health-check, making-me-look-rich check – is there anything to lose when combining vegetarian dishes with Saffron. ( except maybe money… hehehe, jk kinda)

3. My First Saffron-Infused Vegetarian Dish (Fail Alert but like kinda a win also)

Okay, so the big thing with saffron when cooking – from all I saw online because i didn’t want to waist a million dollars in my small try ( and also after failing the second or three time I had more money that is just because my budget lol) is to do a Saffron-Infusion! Okay let me stop being dramatic, is just add some saffron to hot liquid, usually water ( sometimes milk ,but never made a big recipe using milk). Ok So, first recipe – a basic risotto with roasted veggies! First i looked all ingredients. I added saffron to that little bit of water – because is how my brain learned after my Google university diploma, I tried the most amazing – okay almost failed miserably (again lol, its become common in my ‘cook experience’) that part… lol – the water becomes so gold, it looks amazing. Like my kitchen turn into magical alchemist lab! So i cook the veggies, like colorful ones like bell peppers (the orange one for the ‘gold’ feeling ) i also threw some zucchini for the nice freshy texture and red onions – the beautiful of the onion lol ! it’s already epic ! after roasted i put aside and in the pot ( with the magical water) the risotto rice – you know, that weird rice from Italia haha.. i had a very hard time with the recipe haha so after long struggle between overcooked ( a mud thing you don’t want on rice ,really ) and still hard ( crunch crunch on teeth noo) – after what? two hours or something? yes haha. Anyway when the rice got somewhat, just okay lets say, it get into what we could call risotto ( or i thought at the time…) i did that ‘glorious’ add veggies… mixed-mix… let’s eat now. welllll…… It didn’t quite achieve ‘magical epic ‘ and was kinda like more ‘hmm, not too bad’, kind of ‘eh ok’. Lol, i know that some will cringe with that ‘ not too bad’. That saffron part I nailed because omg you just feel that magic flavor ( a litle bitter with the yellow notes – ah my senses are happy!) but the whole combination could have more. the recipe needs soem re adjustment for my very unproffecional hand ! The good thing is: I learned SO MUCH because of this ! The flavor was really there but it did not came out 100% – like something was lost, maybe it needed some butter- for richness! anyway, that failure – I like to say: ‘It’s only learning’, (that help my mental health after ‘cook disasters) make the others way way much better

4. The Rice of Our Lives: Vegetarian Saffron Pilaf Recipes, cause everyone should try it!

Ok, okay – now its pilaf! That word always give me fancy vibes! Pilaf, right? Rice that doesn’t involve ‘mud’ anymore like with the Risotto fail – a much more relax vibe . It seems less ‘needing 10h of concentration’ . So I make more Pilafs from all part of the worlds lol: the Mediterranean kind , a ‘Indian flavor twist’ – I think we have to agree that saffron its very popular in the Middle-Eastern culture! So, for Mediterranean pilaf – we going crazy – onions again – yay (lol i love them so much!) – a touch of garlic – not to crazy – also we added chopped nuts. i found out that pistachio taste sooooo good- like wow so much wow ! its awesome with saffron , some kind of magic thing happens – its nutty and soft but very earthy that give the dish extra character and some cumin powder too , you know – to get all Mediterranean vibes here hehe, add some olive oil – oh wow this so fragrant that make my apartment looks even prettier i feel ! some cooked rice on that magical pot where my tiny thread became orange explosion! After it get nice – like, warm rice after party? – is time to get all mixed. And bam – something simple get so nice – and very ‘good job girl’ to myself lol! The smell- OMG so divine its hard not eat right now while is steaming! Indian style! We have now turmeric powder – the cousin of the saffron! – the cumin again, cardamom because smells great, add ginger. we are in flavor explosion mood lol – I make that with basmati rice because i saw some very great restaurant in Indian using Basmati rice- so im a culinary ‘genius’ copying haha. The spice smells are heaven ! that saffron thread infused the water, gets an upgrade on the smell here , it just became awesome!. then mix – the saffron give color all over – makes everything a golden touch! So now, every flavor has a home with rice, everything is in perfect balance of textures and aroma!. Pilaf is much easier than risotto – for real- you don’t have to struggle with that weird stiky kind of disaster – with Pilaf is rice is so free and independent like it was meant to be lol ! and also I noticed if u don’t like too complicated rice dishes – saffron pilaf is the one because u add a touch of epic and flavor in easy process. Just wow! you know when food get a special level! and saffron gets this ‘super’ ingredient in pilaf, it makes everything a warm party to your tongue (or it does on mine)!. Its like this ‘special occasion food” even when you feel just having your basic Wednesday lol!.

5. Beyond Pilaf: Expanding My Saffron Horizons! (Hello, stews)

Okay, it time to move on, the pilaf part its now over! But i really started digg that golden tiny thread thing… it’s addictive you know?! Its time to bring more adventure, its like unlocking a new level. Okay… I went crazy – stew style. Now imagine this..a cozy stew where you need the heat of warmth (perfect on a rainy day or when you see the electric bills prices…oh God why). Saffron and vegetable combination can be, a ‘chef’ experience without even needing some serious skills! I created the very special Moroccan style with chickpeas – its kinda inspired because it makes me remember Morocco lol! – added some red paprika, coriander and ginger – everything becomes aromatic! Then I throw sweet potato cubes and a bunch of diced carrots! It make every part of the dishes just pop up the colour! I don’t understand this! Haha how is everything this yellow-orange? I also noticed the stew texture is so much fun with soft chickpeas with this kind of sauce that can be absorbed by sweet potatoes its super super wow!. I think its because Saffron gives depth to every flavors. I tried some indian version – ok you could find that all over google but hey it needs my own spin lol – used coconut milk to get a touch of richness – added spinach – green on this golden soup look cool – all that in one single dish! (not a disaster but super ‘masterpiece’ here I’m feeling that). Saffron its crazy how brings everything up and gives extra spice notes and fragrance too! Its a hug in the inside and if that make no sense – thats okay i feel like doing poetry sometimes with food. Stes can make something special even with regular foods – if you think about basic carrot stew with some coconut and chickpeas get upgraded with all spices magic especially saffron- like how it turned form something so normal into an amazing creation – wow that mind blows

6. Golden Noodle Adventures and a Saffron Soup Moment

Okay time for my crazy noodle thing haha. It wasn’t exactly a main meal type of noodles more a soup type of warm treat. This noodles came after those ‘I feel i’m in my grandma’s kitchen with an ‘old Italian cookbook’ vibes, yeah i love these vibes haha! – so think about like wide fettuccine style – mixed with peas and other small bits that gives a playful and joyful texture on my mouth , lol yes thats a good way to say it!. Also – that is ‘Italian vibes’ because this how grandmas on my books did. The sauce: of course, some milk – heated- added saffron! You saw it coming didnt you ? haha , and nutmeg – the other spice i really dig after saffron haha. So here comes golden-velvety saucy over all the noodles – it gets soft! OMG- a perfect comfort meal. you need to do it when your ‘ I had very stress day but deserve a comfort bowl of noodle’ feeling (if u never felt that trust me it does happen) it make u happy ! . About Saffron Soup… well It could’nt be less special haha!. The inspiration its a creamy veggie kind with the usual suspects – potatoes – onions – the usual friends from cooking hahaha! , blended, ( for better digestion lol because im very sensitive in that zone ) saffron-infused with stock then add a touch of cream and more spice! it make warmy and also vibrant!. A pure heaven dish you can make while cooking other things . The colour made even more magical lol, so yellow! Its amazing what Saffron can add not only in flavors but also colors .

7. Tips and Tricks from my Cooking Fails…i Mean Experiences…

Okay. Lets face it – im a kind of ‘chef- try hard ‘ person- (thats my title when talking with my best friend) so…I learned the hard way on how use saffron . My experiences are here and those are legit good to share because it could be useful ( because of all mistakes i did hahah). My main thing : The Saffron infusion IS KEY. No seriously – do not ever ever skip that step! Use a tiny bit hot liquid for minimum 10min to infuse (it give me enough time to prep something else), so u won’t burn those fire strands that give so beautiful yellow thing , also when you give some time for this it gives the whole cooking process another depth in aromas , and flavors – I felt the difference of when i rushed and that taste that did’t last as the slow infusion ! . Second thing, the ‘less is more’ – its easy to go too heavy, do it slow – small part every time you cook to find that perfect point – I learnt this because my budget is kinda short so you don’t want to go like ” ok let’s throw that on whole recipes” – because it not always will make sense . Also store your saffron correctly – away from light! light bad for it – the fridge? ok – dark cabinet, also great! ( i prefer that, its easier hehe). Don’t overcook – don’t ever! Saffron become dull on over heated dishes because u lost its power over high heat – you need just a small addition before the very end and BAM – is time to eat. Be brave: i tried that – some dessert kind with milk and some orange slices (yes crazy i know – but hey the creativity can hit you hard sometimes!) that flavor was very very surprising and great!. Most importantly don’t think is an easy food – think about every dish you have – saffron works very great for a touch of everything – every meal needs that saffron special effect !.

8. Is Saffron Actually Healthy? Kinda digging the benefits tho

Ok, lets talk about another interesting side – besides taste is what everyone is looking when going vegan or vege- ‘does it have nutrients ?’. We all read and know Saffron as the one that can cost a liver or kidney but what more we can expect after spend like a small treasure?! well i’ve googled that and is great! haha Saffron is more than that- those little tiny thread can be also rich in antioxidant – yes thats what my brain learned . All the stuff we want to fight those ‘bad-free radical’ who come up like party monsters doing damage in the body lol . i didn’t want to be very ‘bio-science-expert here’, because it sound kinda of science-y and nobody want it!. but yeah that anti-inflammatory things it could also help too – yeah for the ones who eat a bunch of foods like ‘ i cant live without that donut’, saffron can give a boost too (im talking by myself haha). there’s even stuff saying could uplift your mood..hmmm- its the happy yellow thing then lol? i don’t know – my life could turn on when cooking it . its smell is happy too. so yeah why not!? , the vitamin too – the whole idea of it seems legit – okay I think, maybe im becoming healthy hehehe – so , eat Saffron for being amazing taste wise or also great for ‘life improvement’ – I’m now a saffron-nut hehe. So yeah all good with healthy Saffron here – i’m convinced at least for me

9. Making Saffron Affordable? Like, it’s possible, Right?

So okay- I started to become ‘obsess with’ this, lol sorry, i know. Saffron is cool yes but the wallet starts to scream after the second try out, its expensive we are not in fairytale with money tree- or at least that not in my ‘normal human experience’. So yeah you could get some good one that wont break the bank account…maybe.. First buy good-quality ones . Its best invest more at one purchase to really get those legit Saffron threads . Because those with more ‘powder bits’, they not real , sometimes. Don’t panic- don’t need all saffron from every place of earth.. Buy only from the local shops ( that if those shop got quality) , always read comments ( if they’re a place that online) . Second – you don’t need all in every dish ! like I say before use like ‘drop by drop ‘ the more time you cook with Saffron the more u see you don’t really need big quantity to taste that amazing flavors.. The quantity its not a issue but how much time you spent when is infused that really makes difference – i believe i saw that myself lol!. And third plan dishes : If your a planner – do that, always – it makes the usage more ‘strategically’. In my very beginning when start cook with saffron (and failing again again ) my method was throwing at everything , every food because i’m in crazy mode haha . So my budget start scream like crazy so be smart ! And a great advice when doing Pilaf use saffron AND turmeric ! You got extra color ( it give that vibrant look ) , with that saffron and tumeric (and less spending on Saffron only ). Also – think always for ways to use saffron wisely! That should make you avoid ‘spending disaster’ with spices you could cook your food better and easier (because no rush).

10. My Conclusion… I don’t know.. Maybe try these.

Okay guys ( and girls) we made to end this saga , ( because this it turn into saga for me!) after so many days of my brain being Saffron! hah, im joking, it’s only one or two week of me only thinking food lol!. So in my experience those lil threads gave much joy , and flavor on a budget friendly meal – which for me, was kinda of a huge deal – a way to enjoy fancy dish with normal ingredients. Also bring this idea to the dishes – they not only need good flavors, textures , or ‘ the looks’ but they bring all that with another experience to it .Saffron bring not only ‘i cook’ vibes but also makes everything fancy . i start believing every single meal that have touch of saffron it turn ‘wow’ ! from zero to a super epic meal haha – and that cool thing is what everyone needs- if i learned something after all those fails and almost great try (but finally succeed) is this spice change it all, it does something ‘extra’, I have now another respect when eating Saffron meals- and i also learned it makes the most common day very ‘un-regular’ (does that make sense, i hope it does!)!. And yeah, im a Saffron fan- or Saffron crazy? You tell me after u try all this craziness – ( that maybe is only for my cooking experience). And also it worth to explore because you can get something amazing after cooking with saffron. But hey this is me – maybe i should go now lol – I am curious to see how my ‘crazy idea’ in the world turns in to yours .
