Okay, so like, let’s start at the very beginnin’, which is kinda a good place to begin with (lol). When we’re talking ’bout saffron, we’re not talking ’bout your basic supermarket oregano or your cheap chili flakes, naw. We talkin about something wayy more special; it’s these teeny tiny little reddish threads that come from this cute flower; like the Crocus sativus which is like a very very delicate and pretty flower I must say. It blooms with beautifull purple flower that you think to look at it will produce purple flavor haha, nah but anyway it has the real good treasure in its center which are these three stigma; and that are actually those saffron red threads you know and love, it’s honestly kind of crazy!

So, you got the crocus flower thingy growing, and get ready to get some crazy hardworkin, beacuse the harvest time. This is like the most delicate harvest on earth maybe, honestly they pick the stigmals by hand which is insane you guys! they go in at dawn, when those beautiful flower is open, because the flower bloom fast for just only few days. and then they pick those tiny little stigmals one by one carefully. I saw some videos about how the do the harvest it seems so much hard work and not so much fun honestly.. It seems crazy, But this part like explaines everything, it why is it costs so so much and you know why this price, if not for labor work done by these super cool hard workers i’m pretty sure it gonna cost waaaaay more haha. Then it has to dry ( which also must done carefully so it keep all those beautifull colours) and sorted. It like some tiny little babies really..and after, just then, ready to ship allover the world!. seriously imagine the effort needed from just tiny threads like this!, i can’t beleive we can just easly buy them on Amazon!

Let me give you some, well flower education stuff real quick. Okay, so, saffron’s flower it not your regular daisy, yup. It’s that kind of the Crocus sativus family , which means that its actually a specific crocus family so not any flower will do for our crimson good stuff. what I found amazing its they thrive in like this, really specific conditions , dry summers, some cold but mild winter kind of weather. So, most of our beloved saffron mostly comes from places like Iran, Spain, India and a few other place , all depends how good the weather conditions over there.. what cool to know this fact if we travel around these country we know maybe some little good farming history there, lol!. its the perfect blend like how your ex used to be and left with some bad news, kidding guys haha! its cool flowers seriously!. it has beautifull petals in different colors like violet to lilac with vibrant yellow stems and then our three tiny , vibrant , red and precious stigmals.

Alright ,lets do a science class; okay not actually.. but anyway, so you look closely to your red Saffron, and each saffron “thread” you see isn’t just a solid piece of crimson, not like string or something ha! it actually it consists of three tiny parts each are different : The stigma at the bottom part looks a little thinner which attached with red part we love called Style in the middle, the tip which are actually what the flowers needed called “Fimbria” and this it those three that we pick very carefully so it has only three like I mentioned lol… it’s kind of delicate you know? So, when we add these parts it does some magic for our foods because of thier very delicate makeup; this is why each part makes a difference in it is flavor, scent, and color power. it kinda insane you are so tiny but do big differnce!, like some ninja superhero I’m just saiyan’!. okay maybe a bit dramatic lol.

So here the real truth, get comfortable in your chair because it not gonna be pleasent thing to read! alright so you been seeing price for those precious things; right?! and it makes your eyes wide open every time. ok so its becuase those are precious!. The main main thing you have to understand why those lil red things can empty our bank acoount like they some ninja; its because of a lot of labor intensive. It takes like lots and lots and lots of those lil delicate flowers just to have few grams. Like if you got tons of them; you maybe would get only a handful (sad reality for them farmers..) of good, but still the amount they take per tiny threads its insanelly small!. then you do some crazy hand work again!, and dry them slowly so you don’t lose them vibrant colors and flavors.

its the pure reason those things are gold or better we must call it ‘crimson gold” ha?. ok let’s say if any one is planting a field of any plants it still needs lot of work!, the good saffron needs those labor work like really specific care you don’t find easily. These little crocus plants is like some super needy divas. Its take so much backbreaking labor , starting with plowing planting by hand , careful collection those stigmas very delicately to those sensitive tiny drying stage and sorting its such labor heavy its makes my head crazy. all of that are being done by hard worker human hands ( no robots just good humans yay!). its why this type of jobs are getting more precious nowadays , because with everything automation going we know that there are good people are taking care of each threads that we buy!. Its insane that these hands of worker really is what making these spice costs a bit high (it actually very low if you look how hard this whole labor thing) this is why price should never drop haha; this part makes my respect grow so so much to these farmer. really!.
Yield vs Cost: Is it all worth it at the end?
So with all of that labor its make the yields very low!. to get only one pound of saffron takes over than 70.000 to 150.000+ flower and imagine this! only 1 pound?! can you think about it?! I’m just getting dizzy by typing that number.. The small yield with high costs labor hours all that combined together and plus with the perfect delicate caring all make the prices be what they are today!. Honestly even if prices rise little more I’m totaly okay because all these things needed by real and good hands are taking so hard job, because you buying a tiny piece of art with your saffron!
i think this answers the “if it worth it? ” it’s very very worth it even if we paid more, all things are being taking cared of with those labor intense, like a really great handmade crafts really! its good if we always have this thought!
Real VS fake Saffron and scammy stuff!
Now it gets a little nasty!. where theres a super demanded rare good, theres some scums who try to fakes this for easy money sadly; so you may also find in many places with red stuff that look simliar or sold cheaper than real saffron!. The real ones looks super bright with beautifull crimson threads; but some cheapy sellers might try to fakes you!. and use other parts like corn silks and red dyed hairs (yes sadly this is true, some people don’t care only to their cash in pockets), or any red spices that are cheap just to pretend it’s good!. These stuff are not gonna gives your dish this magical flavor; and also these fakes may can gives some harm effects which no one need!. You must be super very carefull when buying and understand how those red things look and have some great clue that I explain more below!. Its sucks but in today world with fast online market we must always make sure our money are spending with right ones and true saffron dealer because its your safety first.

Alright , let’s gets serious here ok? cause it not fun to get ripped off; I learned it in a bad way that now I double-checks anything. I think now I become expert to identify fake lol . So lets get into a “saffron hunter mood” ! there are many grades in the market. if you buying it on line or from grocery you must understand things a little so you can find good stuff.. You can identify some real things for yourself if you are cautious enough. This stuff not something to take lightly or blindly trust , always double check and now get some cool clues i will share with you.
Understanding Saffron Grades: What Does “Sargol” Even Mean?
So when buying it, your’re gonna face like fancy words and names and sometimes its a bit overwhelming . You see “sargol, Negin and many other”. what those mean ?! , those terms are refering how good saffron quality it has.. The one most top grades we wanna focus on are sargol. those grade made with those stigmas red only part that we were talked earlier; It means “top of the flower” from a persian term; its this crimson vibrant red with all the color strength and flavors!, next on level is Negin and then comes Pushal; Negin has little amount of yellowy style but more lengthier than sargol.. but when it comes to Pushal it actually has entire stigma plus those little pale yellow part; Its good option to buy them but has little bit weak power. Its good when budget can’t do it better to get them because real saffron has any way way more powerful than the fakies!. It all depending of your use and all this quality things; it’s good to have it because the seller is professional and they care to label it correctly.. I must suggest if you find those terms dont hesitates or if any of them sounds off, run away quickly hehe.

Okay, lets now turn Sherlock Homes Mode! Its time for some close look analysis; The real and pure saffon threads should look, bright and vibrant all crimson and uniform colors, not too much brown or faded shades!. And remember when you grab any randoms fake spice its looks always just mix color so not just dark and one color its sign of realness!. And how it looks and structured ? it kinda trumpet like shape that gets bigger on top. Some real thing must looks this shape. And those fakes usually too flat or looks just like dried pieces nothing close to trumpety haha!.
Now for the very most important and my fav, the smell: those should have sweet , flowery smell like you were going for perfume section!. Fake wont get this , the color gets just redish.. and they wont get to the scent profile like real saffron. So be observant for these tips and your saffron experience goes smooth.

Okay! are you ready to go to culinary experinece journey ? lol i make it too poetic sorry! so we go start with easy stuff first for people like us because cooking not so fun, well not for some haha. Rice is very very easy for it , take a tiny lil pinch, and infuse it on some warm water for couple of minutes and see how that golden orange hue, adds so so much flavor in it!, you know I like it with my biryani, or any indian style meals, Its give good kick with warmth!, next can be very tasty and not hard paella , so saffron is essential element of spanish taste . it gets rich colors with amazing seafoody experience, the thing that makes it awesome and delicious , this is an must to put!. You could even put small amount on your chicken or your fishes!, it taste surprisingly nice. So many stuff you just be bold enough to play and taste some more!! there are ton of other delicious dishes waiting for us!. so its about time for me to make and experiment with my own hahaha! You might think savory dish is everything about saffron and I hear you all , you’re all wrong. lol. This stuff also do an incredible job on dessert side!. take some tea or cakes with small amout saffron infused ; I can tell you it has great amazing fragrant smell!. Even on panna cotta , this red goodness will give super smooth and creamy flavor with floral note of it; not like heavy but subtle notes. Even you making any normal everyday drinks like tea or some smoothie and little saffron will make it just so better! My personal way it by putting lil bit on any desserts ( it really elevate them , try if you didnt yet) so don’t limit your exploration and always test and find some gold nuggets hidden haha! So how to make the good infusion ?! very easy all the secrets come here heheh, Always infused on hot water before putting any foods! its unlock more of them goodness flavor notes!; remember only lil bit , less is more because bitter will take it over and spoil the party for our tastebuds. I will suggest toasting lil before infusing helps you achieve richer results so always trying and see how you can go far! I’m sure each and single experience with food you will learn and go farer!.

Soooo , from start when i accidently stained my shirt that became good “educational ” experience in many way , It got me more curious of “What saffron”?! what is it?! I saw like my grandma always used for some sweets that I always eat!, now as grownup, my experiences were something great!. Its something special from our mother earth itself.. It taught me not to underestimate tiny things because there’s ton of effort of it !.. it showed me to appreciate not only the dish taste better it shows an rich legacy. Its also that taught that everything has also story if we give some attention and little effort into it; because knowing this , I see better future in humanity . When things have meaning more than just profit . I would love you to not just to treat it just a “spice” only but rather embrace as tiny part of art!, every times you make a delicious plate that includes these red threads .
