1. A Journey Beyond Paella: My Saffron Epiphany (and hopefully yours).
Okay, confession time. For the longest, saffron to me, was that thing my aunt would bring from Europe for like her cooking paella-stuff, i mean i didn’t knew anythings more besides it and like i tought all Saffron recipes was all around “rice colored thing”, i’ve been ignorant guys I’ll tell you that much, its my biggest sin, it may not be that much if you take to consideration that, oh well. i do lots of bad stuffs you know.. but thats a confession for another time. anyway i used to associate it, purely and exclusively, with that yellowish rice dish, that like it its fine i guess but for real you cant have that once or twice a year just because its like the “only dish you have saffron to”. Then the world just went kaboom in my brain or something like it. One random scroll through this IG that i always try to get addicted into it but somehow can manage, you know social media things that you hate and cant live without.
I see this post.. okay, hear me out: It was a CHOCOLATE DESSERT and was with… SAFFRON! The thing i put on a plain-white dish but this one was a dark thing looking and making all those strange colors together and I had a mental shift there. A genuine woah moment. It was like that movie scene when the nerdy guy finds out magic is real or something idk… Like everything i know about spices went boom and im like ok there is something that I dont know and it probably tastes fantastic..or just taste a big of old lady that i didnt have a problem to that moment, i don’t really care, i want to experience that for sure!.
This started a culinary, let’s be real it’s like an adventure because culinary sounds very very fancy like. a real real adventure into the lands of saffron, away from the predictable paellas, to more like the hidden gems i know saffron have. It is was like finding a secret passage way, the first one i’ve found that not is only me seeing the world in another “shade of color”.. a little melodramatic sorry…i was tired, ok!. and now that is happening I want you with me.. So this “writing this out loud for the internet world” its all about showing everyone and especially for myself that we, and you (yeah YOU!) we dont need more the usual way we do, lets spice the saffron into places, literally!. This is what happens when im bored..
2. Saffron in the Dessert Realm: Because why the Heck Not.
So, first thing first, let’s talk dessert. We are going all out now, throwing traditions outside the window (they deserve a fresh air anyways), If there’s something this “experience” taught me was the need for change when you think you are stuck and also the amount of ignorance on things I don’t really search about like… why? Why all our knowledge about foods was from grandma only, lets dig further you all.
Saffron-Infused Chocolate: It’s Like, a Flavor Hug.
Yeah, you read it correctly, I didn’t even make a spelling mistakes right there lol. Chocolate and saffron: besties now. That was the original point i took, ok the origin to this rabbit whole, so there’s some responsibility of saffron on all of this writing thing happening right now… sorry. The way those sweet flavors clash so incredibly its like fireworks or the way that my body feels when I hear good old pop songs, its just the most magnificent things i can feel. Imagine it like that perfect first warm sip on a chai tea during the cold season, when everything is warm on your tummy, it’s comforting right? That is what the combo can give it too! Try it. seriously!. You just gotta gently warm some heavy cream, let the saffron steep for a few min until it releases its full colour (not brown!! It gotta be like blood oranges thing you know). then mix it with your fav chocolate melted bar… Boom!, Saffron infused Ganache for chocolates and things!
Also dont just sit there doing chocolate ganache!! get wild! You could get this combo into other places to try it! Its crazy easy guys for real. think brownies.. truffles.. its the little gold that can turn good to awesome. Its the little spark you’ve always dreamed in chocolate to come alive, it gives a depth on flavour with some notes of like… i dunno what really, a special old tree taste? Im not sure, ok. Lets see what your brain tell’s ya after this!. I did 11 different truffles using a little of different proportions for each batch and i did really feel the depth. I also started to believe my own writing that was at the very beginning..
Saffron & Honey Delights: Sweet Like You (Okay, Maybe Sweeter).
Another mind blower this time with honey. Saffron is something thats always so strong that i though mixing it with more sweets ingredients will be a sugar rush.. and like it gives a rush BUT a flavour rush!. You take a good, strong-flavored honey (i dig chestnut, for real for reals) you warm it just a touch, with like those few strands, they are gold okay, its like pure magic right there i cant see. You want a nice, smooth yellow tint… not some strange colors or anything bad that means something bad is wrong. Its kinda delicate so be careful like. This saffron honey can work as an amazing drizzle for waffles and all these french toast situations that u should really improve. Also goes fantastically with cheesecakes or just like plain yogurt (this might me weird i dunno for you its an amazing thing) Its crazy sweet, a little tangy… makes life beautiful… okay ill tone it down haha, my hormones is going crazy by just remembering that lol
Also if you put some salt flakes, just little tiny tiny its like a whole another dessert game… I like the balance thing here
Saffron Ice Creams and Sorbets: Cold Perfection with a Golden Touch.
Oh lord, here comes a life changer thing! forget vanilla (ok dont forget it lol) its ice cream world time!. Saffron infused into like heavy cream base or whatever liquid u wanna turn into an ice cream.. it changes the complete experience, and is something else besides caramel flavors. It makes all feel different! Like everything has a different sensation from what you have with standard-sweet vanilla-based or those standard chocolate thing. you make a basic base, just a usual thing that anyone does it. then the trick comes right here with a small mix of saffron with liquid base when its kinda still hot, let that rest for some good hour to infuse and become some magic in a place. The colour should change from some “watery-thingy-ish” to an orangy-bright thing.
That little infusion its what will give it some “omg that flavour thing” and make some real changes on flavour-profile here, something beyond standard flavour profile. You know its good when even your neighbors ask what it’s that thing smellin so crazy… maybe the neighbor thinks i’m a strange but is cool. I am actually very sure now i am kinda the strange neighbor lol. I recommend like doing a classic base to start with, see how it tastes on it and you can work in there! go crazy in your own little experimental lab for once in your lifetime.. but if you try mint you better go to the “go to hell” part ok?. Just Kidding lol. (ok no am not )
3. Savory Saffron Adventures: Time to Get Experimental.
Time to leave sweets behind a lil while, im kinda getting dizzy here so yeah.. now to salty thing!. Don’t let anyone tell you saffron its just like sweets best friend (yes that could work better but we must to be a real couple first), is has some great potential on this field. it elevates dishes to that next level that i know we want and thats why we reading this text that kinda sounds weird on our eyes.
Saffron Pasta & Risottos (But not your grandmother’s kind).
Alright so, everyone kinda makes their risotto a big “deal”, im pretty sure if im from a different life i was a granma from a small italians city. I can spend hour making one lol. This goes beyond a simple saffron infused pasta too, lets be realistic, for that is why you are reading and im here writting!. think: saffron with seafood based dish! Saffron on clams linguini… oh lord the perfect mix! The slight briny seafood mixed with the exotic flowery flavors.. perfect combination, they actually should create perfume like that combo!! I’ll tell ya! Saffron has also something else.. if you steep on warm liquid will make it look that yellow so that pasta is also something else in appearance, so its not that common “oh white noodles pasta” dish, no its something elegant on a normal kitchen. This, guys, this is it. the peak level!.
On the Risotto side.. Lets play more, let us be creative!. skip the traditional mushroom thingy, ok no dont skip.. just like not only for this time! Imagine a saffron risotto with roasted bell peppers (both the green and red kinda works great!) and then you have crumbled feta (and i really like greek Feta, yeah) for that punch, like it makes a little party on the plate right? I can say its a better combination that salt with vinegar i bet!. Also you dont even gotta stick just into veggies thing, for something more luxurious (it also needs the luxe on my life sometimes!), try this thing with seared scallops, the slightly sweetness on scallops will blend so perfectly with saffron, the combo its just beautiful, it looks like is made in the heavens with our god blessing this creation on some weird cooking show you only saw online, for sure! i love the sound when that happens. Try this on for one night out if you like “a lil of wow” on everything. Its perfect!.
Saffron in Soups and Stews: A Golden Depth of Flavor.
Oh lord soup. when it get colds i literally dream on soups. You know the time you need something warming your heart in those winter nights where only thing you think about is staying on you cozy blankets in a room, no sound around? Yes thats exactly time to play and put saffron there!. For example a fish stew! like add the normal ingredients like potato, onion, peppers and garlic (i am obsessed with that mix btw) then at the very end, that lil magic gold, it just makes the dish go on a 3rd dimmension you know!
For other cases it also goes incredible for things with lamb..or maybe any stew with tomatoes! Saffron add this complex earthiness that works perfectly as contrast, almost like putting all pieces in place. The richness it has really goes beyond everything you had tried on soups that makes some dish that was ordinary a total winner. I tried to a chicken and vegetable stew last time with Saffron and like… its something else, makes you rethink your life, and you become someone who really likes the chicken vegetable thingy, for some strange reason i now believe haha!. And yeah thats good!. For someone who hates veggies is pretty big i bet. Also like make this thing like… almost liquid enough so your bread can “swag it on”, do that and you go all happy to the room!
Saffron Meat Marinades: Elevated Flavours (and probably less smelly than onion marinade).
You think i wouldn’t touch this thing huh?? I’ve said already im bored of normal cooking so if I can put Saffron on an easy meal like grilled meat? im on this! You only need few strans, they can just “do it’s magic alone”! the golden ones get along incredibly with all sorts of meats..from beef to chicken or also like the pork side you have for today.. Let the saffron steep on hot water or the liquid part of a normal marinade. Mix some garlic, some olive oil, little touch of lemon juice, some herbs and…BAMM Saffron infused marinate and is ready for action (dont wait like 10 seconds only!)
This doesnt work only to make your meat extra flavorful but will also have a slight golden tinge that makes it fancy right! its great that Saffron do this extra job you know? Like giving it extra magic in visual perspective as a dish.. Imagine it a golden meat like something made in ancient Rome for kings!! and u did it in your home kitchen!.. Yeah that was probably what i though in that day lol!. its great for grilled stuffs or even baked ones.. the little magic that Saffron can brings for even meat lovers i dont understand but yeah im very much here to that haha!. This mix also makes any smell that “too much” into good fragrant. which is nice. my flat mate thanked me very much for this thing that it didnt have strong-smelly nights, finally!.
Saffron Vegetable Sides: No More Boring veggies!.
Saffron also do the best for vegetables.. I also am starting to like a lil of veggies now (my family will proud now!) even though i’ve never like all “the leaves and greens stuffs thing” if they are boring i bet i will probably pass.. I found with time i have that one special problem, for all the ones who really just do simple-bland-plain vegetables… i dont understand that why! We all want a special touch on that. A tiny simple one! You get it now right?. ok, I really dont even have time to get some rant on how they need to improve themselves in kitchen and not being so plain you know but yeah thats me haha, so ok lets focus now.. saffron. Saffron can transform plain side-dishes, the ones like boring boiled or roasted carrots to be a party on every bites. just drizzle or mix like, into that cooking liquid and things are never the same!.
My lil crazy brain created also something kinda perfect for me with carrots. it just a mix of olive oil, saffron (yeah, obviusly lol), some maple syrup and rosemary, and you put carrots on this mix on a pan and BOOM you got this side of golden things that you dont know whats real because this dont tastes carrot thing. For a very more “fresh” combo try putting it also in a roasted sweet potatoes recipe.. Its an amazing mix, and adds something earthy and flowery note and not like “vegetableeeeee taste” u know? its kinda a trick that is so worth on doing! its crazy! Also this thing its great on broccoli (boiled not my fave!) asparagus (a big hell yes from me!) green beans and yeah almost any normal greens thing. All become less “vegetable” tasting!. so good for someone picky eater thing! like me!!.
4. Saffron Cocktails and Beverages: Yes, you can Drink It (safely lol).
After food lets take this further right? Who’s ever thought a thing like saffron was an ingredient for things to be on cups instead of food dishes?. Well thats another life i opened into my eyes these few days.. If its already so delicious on foods why i can make this as a liquid to my soul too!. I also must confess i saw that on the internet when i was almost “giving up” on making “my next experiment” with saffron on anything so i dig in! I thought like i can go full crazy and write everything! That would be my new form to experiment so far!, ok so i think i’ll not put myself on a detox this week.
Saffron Lattes: Cozy Warmth for Your soul.
Forget what i told about basic normal lattes.. oh boy saffron also works wonders for this little treat. To prepare a simple mix it: Heat a base of milk or a alternative one.. I’d try some hazelnut mix i think this time… infuse some saffron there! that saffron goodness makes it feel richer than before, then some touch of honey, or maybe a touch of cinnamon for that real warmth feelings.. Now that its on its top make it extra dreamy.. Like a hug on those colder days i bet it works like an antidepressant (or at least for me!). and you get also some little fancy on visual part you can totally Instagram.
If you are on cold beverage mix use same saffron-infused mix that can works great!. just add a touch more of sugar cause all things cold makes us not see the taste on sweet side so it balances on! it was like another world to find this saffron drink experience and i totally fell in love in making these everyday, it was easy also!. My room is full with saffron now tho. maybe im exaggerating? maybe.. or maybe i love too much!
Saffron Teas and Infusions: Not only for old grandmas you know.
Lets take this to our good old teas.. or rather like my teas haha.. For my surprise I found out that even herbal teas becomes crazy if you add just few little stands.. Like it opens on all another sensations you never would get from some basic chamomile or lemongrass tea.. Saffron just makes your tea way more flavourful with more body and warmth feeling that all teas gives!. its also an perfect match on green tea, I mean the herbalness can take your tea sessions to other dimension for sure!. Its amazing, that it almost works as medicine and tea, they become so so potent that you start believing in weird things like natural magic..maybe im over reacting? I don’t really care haha
To infuse properly heat some water, pour into tea and some lil saffron strings for some few min and.. ta daaah the color changes and your basic tea becomes some exotic treat ready to drink for the first hours of morning or the last moments of night. You also may use this like a cold-infusion thingy, same method put on bottle and leave for 2 to 4 hours on refrigerator (depending your cold level of refrigerator too.. i do have that problems sometimes!) i also saw someone saying if you also do some citrus pieces it brings something else to that combo.. that will be my next tea exploration right now. i am becoming some kinda old-granny now i can sense.
Saffron Cocktails & Mocktails: Golden Swiggy magic.
So you got it so far.. right? that im putting all my passion into this so yeah if you were there i bet you got tired too!. Okay lets play cocktails here and mocktails because this also something i’m still doing in home cause i can make more by myself right! Saffron into cocktails is something different ok?. and i bet they will soon become your new fav. For a base is just do that normal liquid mix with saffron and let them do their magic and.. they make wonders into a standard drinks you do in parties. Think a gin sour mixed with this saffron liquid it will became your life..or any simple lemonade also.. a big game changer really!. Its like if Saffron is a life changer or something..
I also saw some places putting saffron into tequila sunrise and thats also pretty bombastic mix.. I dont have a limit on using them for cocktails right? Is there is any way im taking a deep obsession of using them?. But dont go drinking it straight cause you think its something good, you know is powerful you just can make all kind of fun combos instead doing that one.. you know?? dont go to my mistake lol!. Try any base mix u like just add some saffron for color magic for all to “oooh woww this person” when drinking that mix…its like a very easy magic for everyone. Try adding some flowers you’ll also be the fancyest in room ok?. I do this always in mine, just to fell myself like a magician.. or something lol
5. DIY Saffron Wonders: Infused Oils and Beyond!
I didn’t think my “new” path of using saffron in places could actually give me some power. that I can go for more than one uses of only one spice in kitchen that it felt like so… stucked at some very old-boring recipes. I can see how you see life when you feel free in creativity with a special lil golden touch, you know?. It doesnt needs to stop only on food, saffron is perfect in little D-I-Y projects and the more you think it gets wild haha, the craziest the ideas you can generate with this spice, i felt so inspired today guys, like nothing could ruin it..maybe the headache from yesterday… yeah ok!.
Okay. Lets take a bottle of good-quality olive oil (or anything thats on ur hands right now.. or is there something too boring as peanut oil?? i’ll research for my next adventure) add a little batch of saffron inside. seal and leave in some good dark cool places, for at least one week. And the end product its a oil infused with this golden power! The aroma? The color? Oh man its magic!. use that into everything and it turns every salad or dishes a lil fancy ones without no hard work! Its my easy button in some hard to eat weeks or just because i wanna make that normal dinner extra-awesome you know. If you get extra strands use on making some face masks and that make some amazing “golden- hour” skin too! Like a “magic potions from earth!” kinda feeling. its so soothing! I felt a total “wizard”. And the saffron fragrance can give an additional “relaxation-aromatherapy” as side benefit..
6. My Personal Thought’s (for reals) on all of this.
Guys this all was something crazy.. you got through everything too wow!..I must admit that it seems i do have some minor issue of like having too much obsession by using Saffron in many recipes right now that feels like i can just put everything on saffron now days but maybe is a sign? haha, is something like a big change that happens for someone when discover some passion and i dont get it why.. why I needed to do all these for saffron?. I get the fact of the culinary experimentation on my hands for long now..but the thing is..I’ve learned so many things about how flavors play together.. like the amount of possibility’s I’ve completely lost due of my bad habit of ignoring every ingredient to stick into the same “old habit thing”. Its like i had an eye-opening journey because it makes you rething that, yes is simple but in this tiny package it can generate crazy flavor combinations that can change every recipe forever! and thats the magic on Saffron I think now..that the magic I always wanted to find on a cooking hobby… It really changed my perspectives with foods and the creativity we could actually put behind. maybe I’ll do a another experiment with more spices so… i guess i see you all in some days or something! or i just come here talking all these crazys stuffs and maybe ill regret everything too.. I think i do tend to get extra enthusiastic.. it kinda scare myself most of the times but… meh… dont worry
7. Some Saffron Buying Tips: Don’t go for the Cheap one.. ok maybe go sometimes for it.
Okay little tips here for all. Quality is the big secret when we are talking Saffron, you might wanna do like me in those experiments. AVOID the SUPER cheap saffron things or they probably won’t give u this golden results.. ok for some times when you get broke maybe its your friend too but yeah the magic its on the quality really so for your own good and mine go for it! There are many kinds of “types” if saffron out there, all for differents thing (that probably ill cover on other adventure) i did my own research too to buy the best ones to make things right and the color and smell its super important! and like do NOT smell like feet please, just be fresh!. A bright red color with golden tip its the way to see if your little thing is good for “use magic”
I buy always some trusted brand and yeah its pretty pricey i can say but if you really wants to experience everything and put a new sensation its all the best path.. and like im already all obsessed with Saffron thing you know haha!. Also.. check for “pure saffron”, nothing else just pure saffron dont get fooled you! ok maybe you already know all this things! i just like to pretend like I know something and my mom is probably seeing me being a lil nerd but well at least I am now “creative with food”… she always asked me this question.. also make sure to keep it properly too!, dry and dark place its ideal ok? not like on your window in full hot summer sun haha! (it already happened with me too so i am ashamed of this). and like my rule of thumb here for those saffron strings are that little things always less, it is very powerful you know? less is more my friends! and with time I just keep less than it before so maybe all this thing is me telling you this “less is good too!”.
8. Final Musings: Am I Obsessed? You Tell Me.
So, this has been… something right?. A real roller coaster into flavour towns. I have changed my mind several times through all of these text with more ideas coming from the top of my head. Like did I just create a big saffron religion now? Haha! maybe this will be something. But if you think all of this craziness made just for this random experience with saffron… I honestly can say you can bring something new into something very normal or something very boring in life!. It’s also not only saffron, just you can try in your kitchen also!. if your are also looking some kind of magic on a food routine.. you have found someone too on this trip right here and you aren’t the only one lol!. It goes well to change up a boring life, a cooking thing or a simple ingredient that you think its only for 2 or 3 things.. Maybe just to take our hands on a more creativeness and fun side is all needed… if i go too fast in those food-obssesed thoughts, and im going in, please put me into the right direction before i became some crazed cook… i promise. Also Saffron with chocolate still in my mind..
9. Questions (cuz I’m lost).
Okay after all this massive text.. you also feel you have many questions as well right?. Because this journey felt long even for myself so it make sense now you have a lot of doubts (as i also have). The question for this is simple.. like im here wondering. What are other crazy foods combination that will make my lil brain go boom with flavours too.. I bet there are lots and now im obsessed too, i have become too enthusiastic… like a super power now! its like an extra-passion coming into action!. Should I try this new combo i’ve found: saffron and cheese sauce? would work good or i can’t go more to a cheesy food?. is all of this also some kinda big phase that I’m going through and the reason I became addicted to spices now.. what are your other takes on saffron after all of this?..
