Ingerdients

  • – 150 grams red bell pepper, finely diced
  • – 150 grams green bell pepper, finely diced
  • – 120 grams onions, finely diced onion
  • – 50 grams garlic, finely minced
  • – 1.7 kilograms of whole chicken drumsticks
  • – 42 grams of ground cumin
  • – 14 grams fresh thyme, finely chopped
  • – 36 grams honey
  • – 18 grams fresh lime juice
  • – 18 ml of olive oil
  • – 12 ml of red pepper flakes
  • – 12 ml of salt
  • – 6 ml of black pepper powder

Recipe steps

1. In a large bowl, marinate the chicken drumsticks with olive oil, lime juice, honey, garlic and thyme.

2. Generously season with cumin, red pepper flakes, salt and black pepper.

3. Cover with plastic wrap and allow them to marinate at room temperature for at least 30 minutes.

4. Heat a grill or a griddle over medium high heat.

5. Remove chicken and discard any extra marinates

6. Grill the marinated chicken drumsticks until cooked through and have nice grill marks, for about 12-15 minutes per side or until internal temp reaches 170F.

7. Serve immediately.

For an authentic Cuban touch, serve the chicken with black beans and a side of fried or grilled plantains.If your grill is not big enough for all your marinated chicken, grill in batches so you don’t over crowd your cooking space and have unevenly grilled food.
